…at Nambino, “there’s always canederli to make”

Canederli are a must on the menu! The first lesson you learn when you enter the kitchen at Refuge is that “there’s always canederli to make.” Whether you prefer them in broth for a lighter version or with melted butter and tomato if you’re more of a foodie, it doesn’t matter… they’re always delicious!

Following the teachings of our beloved grandmother Graziella, to prepare this recipe you must shed a few tears.The ingredients are simple: beef, lots and lots of onions, and equally as much love.

The rule is that the polenta must be prepared only in a copper cauldron.

For lake fish lovers, a burst of flavors with marinated trout bites with three peppers, sweet and sour char fillet, and smoked trout served on a crispy crostini.
